Lamb and Halloumi Burgers


A nice change from the normal beef burger, this combination is simply delicious and absolutely bursting with flavor. The lamb mince patty is filled with grated halloumi and fresh mint then served with a crunchy red cabbage slaw inside a crisp lettuce leaf. We all know lamb and mint is a winning flavor match but add salty chewy halloumi into the mix and it takes it to a whole new level. The raw red cabbage slaw adds a satisfying crunch and a lettuce leaf wrap means you can pick up and enjoy this like a regular burger.

Lamb and Halloumi Burgers
Halloumi is a cheese from Cyrus that’s traditionally made with sheep and goat milk. It can be a great alternative for those who are sensitive to cow dairy. Halloumi has a high melting point so it grills beautifully and holds its shape, which also makes it great for binding burgers together!
This red cabbage slaw is a little different from coleslaw coated in mayonnaise. It’s simply mixed together with extra virgin olive oil and apple cider vinegar, which brings an extra freshness for summer and would make a great side for other BBQ dishes.
Yields 4 servings of Lamb and Halloumi Burgers

THE PREPARATION

  • 7 ounces halloumi cheese
  • 16 ounces ground lamb
  • 4 tablespoons chopped mint
  • Salt and pepper, to taste
  • 2 cups chopped red cabbage
  • 4 large Boston lettuce leave
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 4 teaspoons mayonnaise

THE EXECUTION

1. Grate half of the halloumi cheese, saving the other half for later. In a large bowl add the grated halloumi, ground lamb, mint, salt, and pepper to taste.

2. Combine the mixture well with your hands and form into 4 burger patties. Pre-heat a large skillet pan on a stove set to medium-high, then add in the burgers.  Turn the patties occasionally and cook for 15 minutes or until cooked through.

3. Meanwhile, prepare the red cabbage slaw by thinly slicing the red cabbage.  Place the cabbage in a bowl then coat well with olive oil and vinegar.  Season with salt and pepper.

4. Slice up the remaining halloumi cheese.  Once the burgers have cooked through, add the slices of cheese into the skillet. Turn frequently until the cheese browns on both sides. This should take about 3-4 minutes.

5. Assemble your burgers with a lettuce leaf, burger, red cabbage, halloumi slice, and mayonnaise.
